Ingredients
½ packet (approx. 190g) dried mixed beans 1 onion, chopped 2 gloves garlic, chopped 1 stick celery, finely chopped 1 carrot, finely chopped ½ small cabbage, chopped Parsley, 2 tblsp Shell noodles, ½ cup Long grain rice, 2 tblsp Tomato paste, 50ml Olive oil Salt & pepper to season Chopped parsley and grated parmesan for garnish

- Soak the dried bean mix overnight. Then cook for 45 minutes (or until soft) in 2 litres of water.
- In a separate non-stick pan sauté onion, garlic, celery, carrot and parsley in ½ cup good olive oil, until all soft. Add tomato paste and cabbage then season with salt and pepper.
- Add the mixture to cooked beans and water with pasta and rice. Refill some water if required (which is likely).
- Cook 20-30 minutes further testing for taste. Add seasoning as required.
- Garnish with grated fresh parmesan and chopped parsley.
Serve with toasted or fresh crusty bread, yum.
