Easy Thai Green Chicken Curry

Shiraz

Ingredients


1 tablespoon of oil
1 onion finely chopped
2 tablespoons thai green curry paste (homemade or Ayam is best)
1 cup of coconut milk
1/2 cup of water
500g chicken thigh or breast fillet - cut into bite size pieces
100g green beans (chopped are best)
2-3 Kaffir lime leaves
1 tablespoon fish sauce
1 tablespoon lime juice
2 teaspoons brown sugar
Coriander (to garnish if preferred)

Method

 
Heat oil in large pan.
Add onion, curry paste and cook for 2 minutes, stirring constantly.
Add coconut milk and water - bring to the boil.
Add chicken, beans and lime leaves - stir to combine.
Simmer uncovered for 18 minutes.
Add fish sauce, lime juice and brown sugar - stir to combine.
Enjoy with sparking shiraz or pinot grigio
